One-Pot Pasta, Everything Goes

One-pot pasta - a new found love.

It seems that I can put in almost everything that goes well with pasta to be in this one-pot pasta. 

Simple.
Fast.
Minimum washing.
No oil and no splatters.

Wonderful, isn't it?

And the best part?  The tomato puree is also freshly made.  Freshly pureed tomato-based pasta has a tangy taste, unlike those jar or can types.



One-Pot Pasta
(Serves 2 adults, 2 children)

Ingredients:

300gm pasta
1 boneless chicken thigh (cubed)
1 packet of Bunapi mushrooms
4-5 pcs brown mushrooms
1 onion
3 tomatoes, pureed into paste
300ml chicken stock
Parmesan cheese
Salt

Directions:

1.  Place paste at bottom of pot.  
2.  Add in pasta, chicken, mushrooms, onion, chicken stock.  If you prefer herbs, basil leaves, parsley etc may be added too.
3.  Put the lid on and simmer for 5 minutes on low heat.  Remove the lid and check if the pasta has softened.
4.  Once pasta has softened, give the ingredients a good stir and continue reducing the paste without the lid.  Stir the dish often till it is of the consistency preferred.
5.  Stir in parmesan cheese and salt to taste
6.  Serve immediately

E will take 2 bowls of this.  Thus for children who dislike eating tomatoes, this is one good way to trick them.  :P
